
Ingredients
serving size: 2 adults + 2 kids
Ingredients:
1 lb of shrimp, peeled and deveined
2 tbsp of soy sauce
1 tbsp of cornstarch
1 tbsp of minced garlic
1 tsp of minced ginger
4 tbsp of hone
optional: red pepper flakes, chopped scallions, and / or sesame seeds for garnish
If pairing with my edamame cilantro lime rice:
2 cups of uncooked white rice, washed and cooked
1 cup of edamame
1/4 cup of cilantro, chopped
1 stalk of scallion, chopped
1/4 cup of lime juice
1/2 tsp salt
3 tbsp of olive oil
Directions
1. Pat dry 1 lb of shrimp and add it to a large bowl. Add 2 tbsp of soy sauce and 1 tbsp of cornstarch and evenly coat the shrimp. Let it sit for 5 minutes.
2. In a large pan, add 3 tbsp of neutral oil. Add your shrimp along with minced garlic, ginger, and honey. You can also add 1 tbsp of red pepper flakes if you’d like some kick.
3. Cook the shrimp on each side for 2 minutes until fully cooked. When cooked, turn off heat – the honey garlic shrimp goes really well with edamame cilantro lime rice. Enjoy!
