Serving size: 2 adults + 2 kids
Ingredients
Ingredients:
3 lbs of chicken drumsticks
6 oz of tteokbokki rice cake
3 scallions
10 garlic cloves
a pinch of salt + pepper
2 tbsp of neutral oil
2 tbsp of sesame oil
1 tbsp of sesame seeds (optional)
Sauce:
1 tsp of minced ginger
5 tbsp of soy sauce
1 tbsp of oyster sauce
1 tbsp of sugar
4 tbsp of agave or maple syrup
2 tbsp of honey
Directions
1. Heat a large pan over medium heat and once heated, add your neutral oil – I used avocado oil.
2. Add your chicken drumsticks to the pan. I scored my drumsticks using kitchen shears and sprinkled a pinch of salt and pepper over my drumsticks. Cook for 5 minutes.
3. Rotate your chicken drumsticks and cover the lid and cook for another 10 minutes. Flip the drumsticks over and cook for another 5 minutes.
4. Add garlic and sauce ingredients to the pan and evenly coat your drumsticks.
5. Add rice cakes, chopped scallions (2 inch long pieces) and drizzle 2 tbsp of sesame oil and cover the lid. Bring the heat down to low and cook for 5 minutes or until the rice cakes soften.
6. Garnish with sesame seeds (optional) and enjoy!
** You can adjust the sugar / soy sauce amount depending on your desired sweetness/ flavorfulness.
