Kimchi Udon Stir Fry

Serving size: 2 adults

Ingredients

2 servings of frozen udon noodles
1 cup of fermented kimchi
1/2 to 1 lb of protein (I used leftover steak, but you can add bacon, spam, chicken, shrimp, canned tuna, tofu, etc)
2 tbsp of soy sauce
2 tbsp of oyster sauce 
1-2 tbsp of sugar or maple syrup (depending on your desired sweetness)
1 tsp of minced garlic
2 tbsp of neutral oil
1 tbsp of sesame oi
1 cup of water
Optional: chopped scallions and sesame seeds for garnish

Directions

1. Heat a large pan over medium heat. When heated, add 2 tbsp of neutral oil – I used avocado. Add chopped kimchi to the pan and saute for 5 minutes.

2. Add all the sauce ingredients to the pan (soy sauce + oyster sauce + sugar + garlic) and add your frozen udon noodles. I also added 2 cups of frozen bok choy. 

3. Add 1 cup of water and close the lid. Lower the heat to medium low. Keep the lid covered and let the steam cook bok choy and udon noodles for  7-10 minutes. 

4. Uncover your lid and mix everything well together. Add 1 tbsp of sesame oil and your garnish if you’re adding them. Turn off heat – serve and enjoy!
