
Ingredients:
Serving size: 2 adults + 2 kids
3 lbs of pork belly thick strips (I got mine from Costco)
2 tbsp soy bean paste (doenjang)
1 onion
3 green onion stalks, cut into 2 in long pieces
8-10 garlic cloves
1 tsp peppercorns
1 tbsp sugar
1 small knob of ginger, sliced
1 cup of brewed coffee
6 cups of water
Directions:
1. Press the “SAUTE” mode and add 6 cups of water to instant pot.
2. Add soybean paste, onion, green onions, garlic, peppercorns, sugar, and ginger to the water and stir everything together until soybean paste is fully dissolved.
3. Add your pork belly strips. Press “HIGH PRESSURE” and cook for 16 minutes.
4. When done, QR. Quickly remove the pork belly strips from the IP to the cutting board and let them cool – should be warm to touch.
5. Cut the strips into bite size pieces and serve with Guhtjuri on the side. We also added Korean peppers and Ssamjang on the side.
