
Ingredients:
serving size: 4-5 adults
1 packet of taco seasoning OR
1 tsp each of garlic powder, onion powder, cayenne powder
2 tsp each dried oregano and paprika
2 tsp cumin powde
3/4 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 tbsp minced garlic
1 onion, chopped
1 lbs ground beef
1 can black beans (14 oz)
1 can of corn (14 oz)
28 oz can of crushed tomatoes
2 cups of beef broth
Toppings:
Mexican style shredded cheese
sour cream
cilantro, chopped
corn chip
avocado
a squeeze of lime
Directions
1. Heat oil in a pot over medium high heat. Add garlic and onion, cook until softened (~3 minutes.)
2. Add beef and break it up as you cook it – when the meat is almost cooked through, add the taco seasoning and mix in well.
3. Add the remaining soup ingredients and bring to a simmer. When ready, turn the heat down to medium or medium low.
4. Simmer for 10-15 minutes to bring all the flavors together. You can adjust thickness with water, if needed.
5. Serve with your desired topping and enjoy!
