
Ingredients:
Serving size: 2 meals for 2 adults + 2 kids
1 lbs of chicken (I mixed both thigh + chicken tenderloins)
1 cup of rice (I used sushi rice but you can also use jasmine)
9 cups of water
1 piece of ginger (~1in thickness)
2 tbsp of sesame oil
1 tbsp of soy sauce for soup (*adding more soy sauce than this amt will result in your porridge turning darker)
2 tbsp of minced garlic
salt + pepper to taste
optional: garnish with chopped scallions
Directions:
1. Add 1 cup of washed and cleaned rice (I used sushi rice but you can also use jasmine) to the instant pot and add 9 cups of water.
2. Add your chicken and ginger and set the IP to HIGH for 20-25 minutes. When done, NATURAL RELEASE.
3. Open the instant pot and turn on SAUTE. Add minced garlic, sesame oil, and soy sauce for soup. Stir together until the porridge thickens a bit (~5-10 minutes.)
4. Salt and pepper to taste and top with sesame seeds and chopped scallions – enjoy!
