
Ingredients:
1 cup of chopped kimchi
1/3 cup kimchi juice
5 oz of meat of choice (I used my go-to Korean pork sausage)
1 cup of frozen minced veggies (carrots, zucchini, squash, and white mushrooms)
3 cups of cooked sushi rice
3-4 eggs
2 tbsp sesame oil
2 tbsp cooking oil
roasted & seasoned seaweed
Directions:
1. Preheat your pan over medium heat. Once heated, add your oil of choice and add your kimchi with the kimchi juicee.
2. Saute until the kimchi turns slightly translucent. About 5 minutes. Then add your meat.
3. Once your meat is fully cooked (the Korean pork sausage I use is fully cooked so I add the minced vegetables shortly after,) add your minced vegetables. Saute for 2-3 minutes or until the minced vegetables are cooked through.
4. Add your rice and mix it in well. Add 1/4 tsp of salt or salt to taste.
5. Add your eggs in the center of the pan (add more oil if needed) and mix the egg in with the kimchi fried rice. Add 1/4 tsp of salt or salt to taste. As a finishing touch, drizzle sesame oil and mix it in well. Turn off heat.
5. Serve the kimchi fried rice with roasted & seasoned seaweed on the side to enjoy together!
