
Ingredients
Serving size: 2 adults + 2 kids
4 Branzino fillets
1 cup of cherry tomatoes, halved
1/2 onion, thinly sliced
1/2 zucchini, thinly sliced
1/4 cup of parsley, chopped
1 tsp of white cooking wine for each fillet
1 lemon, cut into quarters
Extra virgin olive oil
Salt
Pepper
Directions
1. Preheat your oven to 350F.
2. Cut your parchment paper into 4 sheets (big enough to fold over the fish) and lay the bottom with sliced zucchini and onions.
3. Lay your Branzino on top and top the fish with tomatoes, a pinch of salt and pepper, olive oil, and parsley.
4. Fold the parchment paper in half and seal. Bake for 12 minutes.
5. Top with extra basil, squeeze lemon juice on top, and 1 tbsp of extra virgin olive oil. Serve and enjoy!
