
Ingredients:
serving size: 3 adults
1.5 cup of water
1 block of tofu
1 tbsp peanut butter
3 tbsp of sesame seeds
1 tsp of sugar
1/3 tbsp of salt
boiled egg
1/2 of a mini cucumber, julienned
1/2 of a tomato, cut into wedges
noodles: you can use somen or Korean knife cut noodles if you enjoy thicker texture
Directions
1. Add water, tofu, PB, sesame seeds, sugar and salt to a blender and blend until you get a smooth texture. Store it in the fridge.
2. Cook your noodles as per package directions. For Korean knife cut noodles, you will need to cook them longer.
3. While the noodles are cooking, prep your toppings.
4. When the noodles are done cooking, rinse in cold water to remove all starch.
5. Plate your noodles and pour over the sauce. Add your toppings, salt to taste and enjoy!
*I add ice to water down the soup base as it is on the thicker side + salt to taste!
