Hobak Jeon (Pan-Fried Zucchini in Egg Batter)

Ingredients:

2 zucchinis 
3 large eggs, beaten
1/3 cup flour
neutral oil for frying

Directions:

1. Slice the zucchini into 1/3 inch thickness. 
2. Place the zucchini slices into a bowl and pour 1/3 cup of flour. Toss them in flour and coat evenly.
3. Heat a large non-stick pan over medium low heat. Add 2 tbsp of oil. 
4. When the pan is heated, dip the zucchini pieces into the egg batter and place them individually in the heated pan. 
5. Cook for about a minute on each side – until lightly golden. Cook for another minute on each side until golden. 
6. Repeat until all the pieces are done. Add additional oil as needed. Serve warm with soy sauce on the side.
