
Ingredients:
4 salmon fillets
1 cup of sushi rice, washed (water amount depends on the rice cooker – check your manual!)
1 tbsp rice vinegar
1 tbsp minced garlic
2 tbsp of soy sauce
2 tsp of sugar (1 tsp to add to rice and 1 tsp at the end)
2 tbsp of furikake
1 tbsp of sesame oil
2 tbsp of green onions, chopped
1 tbsp chopped scallions
salt + pepper to taste
Directions:
1. Wash your rice until the water runs clear. Add rice and water to your rice cooker and add 1 tbsp of rice vinegar and 1 tsp of sugar.
2. Add your normal amount of water for cookingrice and top with salmon fillet pieces. Add 1 tbsp of minced garlic.
3. Cook your rice on your normal setting.
4. When the rice is done cooking, break apart the salmon pieces and add soy sauce, sugar, furikake, sesame oil, and green onions. Mix everything together well so the rice is well seasoned. Salt to taste.
5. You can serve salmon rice in a bowl with sliced avocado, cucumbers, and roasted + seasoned seaweed. My kids wanted sushi nori instead – which works just as well!
*You can also make these into salmon & rice onigiris!
