
Ingredients:
I used the following measurements for 1 lbs of chicken tenderloins but feel free to adjust according to your / your family’s liking:
1 tbsp of chili powder
1/2 tsp of garlic powder
1/2 tsp of onion powder
1/2 tsp of dried oregano
1/2 tsp of paprika
1 1/2 tsp of cumin
3/4 tsp of salt
pinch of black pepper
Mompotle rice:
5 cups of cooked rice
1 tsp olive oil
2 tbsp of chopped cilantro
2 tbsp of lime juice
2 tbsp of lemon juice
a pinch of salt
Additional ingredients:
1 lbs of chicken tenderloins
Optional toppings: corn, black beans, lettuce, bell peppers, red onions, cilantro, store bought salsa, and avocado
Directions:
1. Marinate your chicken with chicken taco seasoning by mixing in all the spices above with the tenderloin pieces. Let it sit in the fridge for at least 1 hour.
2. Saute your fajita vegetables with 1 tbsp of neutral oil (I used avocado oil) over medium heat. Saute just until the vegetables begin to soften and move the vegetables from the pan immediately to a plate.
3. Make your “mompotle rice” by mixing in all rice ingredients. Prep additional toppings you’d like to add to your taco bowl.
4. Put a bowl together and salt and pepper to taste. Enjoy!
