
Ok this just might be the best mom hack of 2024 – frozen minced vegetable cubes!!! I minced 2 large carrots, 1 pack of white button mushrooms, 2 zucchini and 2 yellow squash in the processor, gave them a good mix, and then made them into cubes using a spatula (make sure the indents are about .25 inches thick!!) and froze them overnight. These cubes have been used to make spaghetti (under 10 min!!!) and veggie and rice porridge and will be used for many other dishes like fried rice, curry & rice, Jjajangmyun, and Korean egg omelette 😊 this hack has changed my life last week and you’re welcome in advance!!! 🤪🫰🏻
Rice & veggie porridge recipe:
Boil 2 cups of water. Then add 2 cups of cooked sushi rice. Then add a small cube of the frozen minced veggies. Whisk 1 egg and pour it in. Add a pinch of salt (or more if needed) + 1 tbsp of sesame oil. Mix them in well, serve and enjoy!
